Red Velvet Cupcakes with Cream Cheese Frosting

 We made these amazing Red Velvet Cupcakes with Cream Cheese Frosting for our Minnie Mouse Party. I think they turned out adorable! For the ears we used mini oreos and the bows we made with a chocolate mold. If you make them let us know how they turn out!

Red Velvet Cupcakes

Red Velvet Cupcakes

Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1-teaspoon baking soda
  • 2 1/2 cups flour
  • 1 cup butter, (unsalted real butter) softened
  • 2 cups sugar
  • 4 Large eggs
  • 1/2-cup milk
  • 2 teaspoons Vanilla Extract
  • 1-cup sour cream
  • 1 (1 ounce) bottle Red Food Color

Instructions

  1. Beat butter and sugar for about 3-5 minutes with electric mixer. You want it light and fluffy. Add in eggs, one at a time. Mix in milk, vanilla, sour cream and red food coloring. Mix until well blended. Add in cocoa powder, baking soda and flour. Mix until blended.
  2. Fill cupcake tins or liners about 2/3 full.
  3. Bake 20-25 min, or until toothpick comes out clean.
  4. Completely cool before frosting the cupcakes.

Cream Cheese Frosting

Ingredients

  • 2 blocks of cream cheese (left on counter to soften, about an hour)
  • 2 sticks unsalted butter (softened)
  • 1 tsp vanilla extract
  • ½ tsp pure almond extract
  • 16 oz confectioners sugar

Instructions

  1. Mix all ingredients in bowl for about 3 min with electric mixer.

  14. Great idea and great looking cupcakes. I have always like red velvet with cream cheese frosting but not sure if my boys would like it. They prefer white cake with buttercream like me.
